roasted tomatoes with shrimp and feta

made these this weekend – second time i’ve tried the recipe and just as a delicious and truly as simple as it looks on the real simple website.  chop some tomatoes, mince some garlic, chop some parsley, bake and eat 🙂  the only thing missing is maybe some spice to kick it up a notch.  i added some good ole texas pete last night, but maybe some crushed red pepper??  here’s real simple’s professional photo of what it should look like –

now they recommend serving it with crusty bread – i absolutely agree.  the lemony, tomato, garlic broth is delish and perfect for bread dipping.  the other possibility is maybe serving it with some long grain rice to help soak up some of that broth.  either way – it seems to be a super easy go-to, keeper reciper that doesn’t see too bad for you either!
